Ingredients
  

For the Crust

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar

For the Filling

  • 1 (3.4 oz) package instant pistachio pudding mix
  • 2 cups cold milk
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ cup chopped pistachios for garnish

Instructions
 

  • Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press this mixture into the bottom of a 9x13 inch dish to form an even layer.
  • Make the Pudding Filling: In a separate bowl, whisk together the pistachio pudding mix and cold milk until it thickens, about 2 minutes. Set aside.
  • Prepare the Whipped Cream: In another bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Fold half of the whipped cream into the pudding mixture gently until well combined.
  • Layer the Dessert: Spread half of the pistachio pudding mixture over the crust, then top with half of the remaining whipped cream. Repeat the layers, finishing with whipped cream on top.
  • Chill and Serve: Cover the dish with plastic wrap and refrigerate for at least 4 hours or until set. Before serving, garnish with chopped pistachios and a drizzle of chocolate sauce if desired.
