- 1 lb Cajun sausage (sliced into rounds)
- 1 cup long-grain rice
- 1 bell pepper (chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 can diced tomatoes (14.5 oz, undrained)
- 1 tablespoon olive oil
- Salt and pepper (to taste)
Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced Cajun sausage and cook until browned, about 5 minutes.
Add Vegetables: Stir in the chopped bell pepper, onion, and minced garlic. Cook for an additional 3-4 minutes until the vegetables are softened.
Incorporate Rice and Seasonings: Add the rice, Cajun seasoning, dried thyme, and a pinch of salt and pepper. Stir well to combine all ingredients.
Pour in Broth and Tomatoes: Pour the chicken broth and undrained diced tomatoes into the skillet. Bring the mixture to a boil.
Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
Fluff and Serve: Remove from heat, fluff the rice with a fork, and serve hot. Garnish with chopped parsley if desired.
