Ingredients
  

  • 1 lb Cajun sausage (sliced into rounds)
  • 1 cup long-grain rice
  • 1 bell pepper (chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 can diced tomatoes (14.5 oz, undrained)
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)

Instructions
 

  • Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced Cajun sausage and cook until browned, about 5 minutes.
  • Add Vegetables: Stir in the chopped bell pepper, onion, and minced garlic. Cook for an additional 3-4 minutes until the vegetables are softened.
  • Incorporate Rice and Seasonings: Add the rice, Cajun seasoning, dried thyme, and a pinch of salt and pepper. Stir well to combine all ingredients.
  • Pour in Broth and Tomatoes: Pour the chicken broth and undrained diced tomatoes into the skillet. Bring the mixture to a boil.
  • Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  • Fluff and Serve: Remove from heat, fluff the rice with a fork, and serve hot. Garnish with chopped parsley if desired.
