Ingredients
  

  • 2 boneless chicken breasts (or thighs for extra flavor—I won’t tell)
  • 1 lemon (zest + juice)
  • 3 garlic cloves, minced
  • 1 tsp olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • ½ cup quinoa (cooked)
  • Spices: Paprika, black pepper, salt

Instructions
 

  • Marinate the chicken: Mix lemon zest, juice, garlic, olive oil, paprika, salt, and pepper. Let the chicken soak in this goodness for 15+ minutes.
  • Grill or pan-sear the chicken until golden (≈6 mins per side).
  • Roast the veggies at 400°F for 15-20 mins. Toss with a pinch of salt.
  • Assemble your bowl: Slice chicken, pile on quinoa and veggies. Drizzle leftover marinade as dressing.
