  • Thaw the lobster tails overnight in the fridge. Cooking them from frozen makes the meat rubbery.
  • Check the lobster with a thermometer. It is done at 140°F (60°C), when the meat is opaque white. Overcooked lobster turns tough.
  • Pat the steaks dry and sear them in a very hot pan. That gives you the dark, shiny crust. Don’t move them while they sear.
  • Steak doneness: pull the steaks at 115°F (46°C) for rare, 125°F (52°C) for medium-rare, 135°F (57°C) for medium. They rise about 5°F as they rest.
  • Don’t overcook the shrimp. They are done when they curl into a loose C. A tight O means overcooked.
  • Keep the angel hair slightly firm. It cooks fast and keeps softening in the sauce, so drain it a minute early if you’re unsure.
  • Add the Parmesan off a low simmer. A boiling sauce can turn grainy. Use pasta water to loosen it if it tightens up.
  • Work in this order: steaks rest while the lobster broils, so everything lands hot together.
  • Scaling: The servings buttons change the ingredient list. Step text keeps the original 2-serving amounts. For more steaks, cook them in batches and rest them together.

Easy swaps

Lobster: use extra jumbo shrimp, scallops or crab legs. Broil shrimp for 4 to 5 minutes, and crab legs for 5 minutes just to warm them through.

Steak: use New York strip, filet or sirloin. Filet needs a little less searing time per side.

Pasta: use thin spaghetti, linguine or capellini in place of angel hair, and cook it according to the package.

Spinach: use baby kale or arugula, stirred in off the heat so it just wilts.

Lighter sauce: use half-and-half in place of the cream and expect a thinner sauce.

Heat: add more cayenne to the lobster butter, or extra red pepper flakes to the sauce.

Dairy-free: use olive oil in place of the butter, full-fat coconut milk in place of the cream, and skip the Parmesan. The flavor will differ from the photo.

Storage and reheating

Fridge: store each part separately in airtight containers for up to 2 days.

Reheat pasta: warm it in a skillet with a splash of cream or broth over low heat, stirring gently.

Reheat seafood and steak: warm gently in a low oven at 275°F (135°C), tented with foil, for 10 minutes. High heat makes both tough.

Freezer: not recommended.

Served. Crack into the lobster, slice the steak and twirl the creamy angel hair.
